I was asked to in 12 days resurrect the restaurant Ingmar Bergman closed inside the National Royal Theatre.
Shanghai 30/Skvader
Since NeonDämon was a success I was asked to stay. But instead of keeping Bergmans restaurant I decided with the help of the theatres epic prop house to do different restaurants every month. Two of them where Shanghai 30 a Chinese jazz-opium den set in the 1930th. Skvader was another one. The Skvader is a dream animal that a taxidermist in Sweden made in the 1840thand with that as inspiration we created a hunting lodge and served a 7 couse tasting menu made from dream animals.
